The Conscious Chocolate brand began with a dream to make a lovingly manufactured, richly textured yet healthy chocolate.

Through the continued vision of a group of health conscious individuals, the reality of an organic, raw yet great tasting chocolate has been created in a range of chocolates unrivalled in the world for quality ingredients, loving preparation with a rich delicious texture that is also healthy. Our mandate is that everyone, regardless of dietary requirements, can enjoy the variety of chocolate we make.

While chocolate has for centuries invoked thoughts of decadence, love, romance and a sense for the forbidden with over indulgence a constant worry, chocolate can actually be good for you. Hard though it is to believe, chocolate produced from organic, raw ingredients, containing no refined sugars and produced using minimal heat (and with loving intention) will deliver vital antioxidants, amino acids, vitamins and minerals. And it can still taste amazing and deliver that texture and feeling of decadence and luxury. Our chocolate range is healthy as it is luxurious.

I have tried lots of Vegan chocolate over the years ... in my view your chocolate is second to none of them. It was absolutely brilliant. It was so much smoother and less bitter by comparison and it felt and tasted far less "chemical" than some of the popular big brand "cooked" Vegan chocolates. Pana Barbounis is the founder and chocolate maker of Conscious Chocolate Australia. Pana lives in Melbourne and operates his business from Port Melbourne, Victoria.

Pana has a broad background in hospitality, having worked as a Director of wholesale catering and Director / Owner of many Melbourne cafes & restaurants for over 20 years. He is passionate about raw and slow-cooked food. Taste is also important and Pana enjoys bringing people together to experience the enjoyment of cooking food through love, health and happiness. Pana never compromises on ingredients by ensuring good quality organic ingredients are used to deliver the best flavours, texture and taste in a very balanced way.

Pana is a father of two children who inspire him to live a more balanced lifestyle with his organic produce from his very own garden, his loving pet chickens and his passion to cook from his personally-constructed wood oven. His passion is to bring joy to everyones faces with the love of good quality food and to live life in a more harmonious way.

What's in it?

Conscious Chocolate combines the finest raw, wild crafted and organic ingredients to produce a delicious, smooth textured chocolate. Our chocolate base recipe contains:

  • cacao solids
  • cacao butter
  • agave nectar
  • cacao powder
  • coconut oil
  • wild carob
  • cinnamon
  • himalayan crystal salt

Raw cacao is now recognised as a super food due its high levels of antioxidants, vitamins and minerals. When processed at high temperatures as is common in most chocolate, its nutrient value is significantly reduced and it becomes highly acidic when ingested. Our Chocolates are prepared using a consistently low temperature to preserve the natural occurring nutrients and antioxidants. This also prevents the build up of acid in the body.

Our chocolate is sweetened with natural Agave nectar which is a naturally low GI sweetener.

The whole process from start to finish is completed by hand, made with love using only the best ingredients from organic sources to pure wild crafted essential oils such as orange, tangerine, rose and peppermint. The essential oils bring a beautiful frequency and their own highly therapeutic health benefits to the chocolate.

At Conscious chocolate we are concerned with 3 things; the quality of our chocolate, the health of your insides and the sustainability of the Earth. The high level of nutrients make our chocolate good for your insides and because it is handmade locally with organic ingredients it is good for the earth too.

We are proud of our chocolate and want everybody to be able to eat it, so we made sure they could. Our chocolate is low GI, vegan and gluten free and has no dairy or soy.

Because we use all natural ingredients, no preservatives and low GI natural sweetener, our chocolate is good for everybody - even children.

How it's made

  1. Cacao grown in organic environment
  2. Cacao pods harvested
  3. The cacao gets processed into the key components for the chocolate - cacao solids, cacao butter and cacao powder
  4. Ingredients are packaged and stored
  5. Raw ingredients are dispatched to Australia …
  6. … where they arrive at the Conscious Chocolate kitchen
  7. Ingredients are weighed and proportioned
  1. The wet ingredients are then slowly melted, never going above 42°c in order to maintain high nutrient levels
  2. The dry ingredients and natural flavours like Goji berries or peppermint oil are added
  3. Everything is then mixed by hand …
  4. … and poured into moulds
  5. The chocolate is then set in the refrigerator,
  6. and packaged in boxes, ready to be enjoyed
